This comfort food does my belly right. I haven't had it in such a long time and may have completely forgotten about it had it not been for my sis, Brooke, asking for a version of it. The recipe I use, I modified from a crockpot version but it's absolutely delish whether in 30 min or 6 hours.
And it goes a little something like this:
Beef and Broccoli
For crock pot:
Spray sides of crock pot. Slice 1&1/2 lb flank steak into thin strips, about 2 inches long. In crockpot mix the following sauce: 1 c. Beef broth (I love the bullion from Gygi that is in the fridge), 1/2 c soy sauce 1/3 c brown sugar, about 1 T. of olive or sesame oil, garlic to taste. Add steak strips to pot and mix to coat. Cook on low for 6 hours. 30 min before eating, add 2 T corn starch to 4 T cold water then whisk till smooth. Add to beef, continue to cook for about 25-30 min. Steam broccoli and mix with beef before serving.
Non Crock Pot version:
Use the same meat, or Use thin, pre-sliced, round roast. Cut into appropriate strips (because we don't want to eat inappropriate strips). Make sauce as above but add the water/ cornstarch at this point. Marinate meat strips in sauce until ready to cook (while you set the table or prepare broccoli, or cook rice, or pot-stickers... It only takes about 5-10 min to cook so it should be the last thing you do). Cook meat in pre-heated frying pan, in sauce. Sauce will thicken as it simmers. Once meat is cooked through fold in steamed broccoli.
Serve over rice.
