Lentil soup

This soup is awesome. It reminds me of the lentil soup I loved at the restaurant above the Deseret Gym years (...and years) ago. I got the bones of the recipe off AllRecipes but modified it enough that it's officially "my version".

Ingredients: (I'm usually a 5-ingredients-or-less-type-of-cook, but this is really just lentils, broth, veggies and seasoning... So it pretty much just 4 things. :)

Lentil Soup:
2 c dry lentils
12 c water
12 bullion cubes
(Put in soup pot on high while preparing all the other ingredients)
Add the following after lentils have cooked about 20 min:
4 diced carrots
4 diced celery stalks
1 diced onion
3 cans peeled diced tomatoes
2 cloves grated garlic
2 t. Dried basil 
2 t. Dried oregano
2 bay leaves
2 T red wine vinegar (others will be fine too)
2 t. Salt
1/2 t. Pepper
Bring above to a boil then cover and reduce to simmer for at least an hour. 
(Or put everything into the crockpot in the morning and enjoy after work!)
Optional: before serving, add 1 c. Thinly sliced spinach and cook until wilted. 
Also good with stew meat or browned hamburger or sausage.

Serves a LOT. Half leaves plenty of leftovers for my family of 5.
